Avocado Pudding

It's official- I'm back on that Vitamix train. Two weeks in, and 2016 has been chock full of quick, easy, healthy morning smoothies. This Kourtney Kardashian-inspired Avocado Pudding has been my daily-go-to; just two ingredients, a few seconds in the mixer, and I'm ready to take on the day. If I have a little bit of time to enjoy with a spoon, I'll top this green goodness with granola, nuts, or coconut for a little extra crunch.

Peel and pit one avocado, combine with one cup Califia Vanilla Almond milk in mixer; blend until smooth. Enjoy with a spoon or straw. For a frostier variety, chill in the refrigerator before serving.
