Chicken Soup With All the Shortcuts

This past weekend was the lazy, cozy kind. And it was just what we all needed. It feels like we have been going nonstop the last few months- you know, moving during a pandemic, starting Kindergarten, holidays etc- so the Matkovics were in the market for a little reset.
So we stayed in our cozies for most of the day, and I threw together a yummy, but SUPER simple, homemade chicken soup.

And so many of you requested the recipe, so here it is…

I’ll begin with the shortcuts:


1. I used a cooked and hot ready-to-eat rotisserie chicken. This might make actual chefs, like my mama, cringe. But it saves so much time and is delicious and worth the looks she’ll give me. As soon as I got that bird home I removed the skin and shredded all the meat with two forks. Perfecto!

2. I always buy the precut packaged “trilogy” of carrots, celery and onions. Is it more expensive? Probably. Is it worth a few extra dollars? Absolutely. And I feel like I save the waste I’d likely have buy buying a huge stalk of celery and a bunch of carrots.

3. I threw in steamed brown rice from a package. Mine was leftover from the other night, but there’s zero shame in my microwaved rice game. I used the 90 second variety and tossed it in already cooked at the end. It added some heartiness and deliciousness to the finished product with zero effort.

Ok, so now to the recipe. Don’t blink, or you’ll miss it. It’s that fast…


Chicken Soup

Ingredients:

  • 1 cooked rotisserie chicken
  • 1 large package diced carrots, celery, onion
  • 1 32 oz box chicken broth
  • 1 32 oz box bone broth
  • 1 cup cooked brown rice
  • tumeric, to taste
  • salt and pepper
  • olive oil

Instructions:

  1. Remove skin of chicken and shred meat with two forks, set aside
  2. Sautée vegetables in olive oil and salt and pepper until onion is transluscent
  3. Add broths into a large pot- I used chicken broth and bone broth, but you can use whatever kind of broth suits your fancy
  4. Once vegetables are cooked, add to broth
  5. Add shredded chicken to broth
  6. Add brown rice
  7. Add some tumeric and salt and pepper to taste
  8. Give it all a good stir
  9. Bring to a boil, then let simmer for about 15-20 minutes
  10. Let a cool a little before serving- ours was quite hot after simmering
